Came out really well...I guess next time I won't start it at 1 pm...I took it off 11 hours later after it hit 190..been eating great sandwiches the last 2 days...gave some to my girls...all gone..

Lets just say I have acquired a few Kettles.  Big and small.   Vintage and New...  Some say I have a problem.  I find the Kettle, buy the Kettle, USE the Kettle...No problem...

Did you follow the vent instructions ver batim per the SnS guidelines? Only reason I ask is because I'm trying to master this SnS as well.

I did...lit about a dozen briquettes in the corner of the SnS ..etc...I put the brisket on when probe showed 235..tweaked the vents to almost closed and didn't have to touch it for a good 8+ hours
