Summit cook- flank steak, bellas, onions, and baked potatoes

This was last Friday night's cook.

Firing it up. The hinged lid is really nice. They did a great job on the hinge.



Onions and taters with the weber nails.



Time to add the mushrooms





Taters done



Mushrooms moved indirect and added a little Parmesan cheese







Flank steak - get these from a local butcher marinated. They never disappoint.



Opening the vents for high heat sear. I used a 1/1 mix of lump and briqs for this cook. It is a really nice searing machine.

At the turn



Once a nice sear on both sides moved indirect until 125



Nice meal and I will admit Weber put a lot of thought into this cooker

@Bbqmiller How do you prep the onions? Do they typically stay together ok as they cook?

Just slice them up about 0.5 to 0.75 inch and place them in a ziplock with OO. I used the chipotle weber seasoning. They will stay together just have to pay attention a bit. Sear them on both sides and then pull indirect and finished off as you see fit. They are really tasty and sweet done this way.
