Great Jerk Chicken Marinade

I found this jerk marinade recipe in a Jamaican BBQ recipe book.  I used chicken thighs marinaded for almost 20 hours.  Everyone loved it.  A little heat but not overwhelming.

1 onion finely chopped
1/2 cup finely chopped scallion
2 tsp fresh thyme
1 tsp salt
2 tsp sugar
1 tsp allspice
1/2 tsp ground nutmeg
1/2 tsp ground cinnamon
1 hot pepper finely chopped (I used 3 jalepenos)
1 tsp ground black pepper
3 TBSP soy sauce
1 TBSP cooking oil
1 TBSP cider vinegar

Mix together and add meat of choice.  Marinade for at least 4 hours.

how would you describe the flavor?  More of a sweeter taste?

I wouldnt say sweet...more tangy/spicey I guess (from the apple cider vinegar, soy and peppers/onions).  I have tried the Penzeys Jerk Seasoning and was disappointed in that it didnt seem to add any flavor.  No shortage of flavor with this recipe.  Give it a try.

Sorry-old thread but it is blasphemy to use a jalapeno in jerk rub!  Scotch bonnets or in a pinch habanero can be used.  But it's that scotch bonnet flavor that IS jerk sauce.

Thanks for the recipe. I just made a 9 lb batch. I used one mild and one hot jalapeņo and the heat was almost unnoticeable after cooking, but still very good!
