The knife is a 10 in Shun Ken Onion series chef knife... but with its length and edge it is a great slice as well. I honestly used it for the entire cook from clean to slice of the brisket. I have used it comfortably in fish fabrication as well as chicken butchery. Shun is my go to knife.
