Summit cook - salmon and jalapeño CI cornbread

After a day working in the yard, it was time to cook dinner



Lighting up the coals. The middle of the pile is directly above the gas starter. I positioned the coals to the side for indirect.



Taters and the cornbread.  I used a buttermilk/sour cream recipe and added some aged cheddar and Parmesan cheese.  The skillet was preheated in the cooker at around 425 before pouring in the batter. This will give that nice crust.

Salmon was dusted with a maple sugar based rub. Cooker cooled down to 350. I cook salmon indirect on foil - used a couple chunks of alder.

Oh man, that's looks incredible! I love jalapeño corn bread.

So what do the potato nails do? I've seen them, but never used them.

The nails help the taters cook more evenly as they transmit heat to the inside. They cook quicker too. You can get them from Amazon - $10 a box of 6
