Earlier this week I grilled up some cheeseburgers for my wife and me and my father-in-law. Earlier in the day, my sister-in-law and her husband welcomed their first child into the world, the first grandkid for my father-in-law. He's been ecstatic and it's been nice to have something positive for the family after my mother-in-law lost her battle with brain cancer 2 years ago. Anyway, that's a little family history, but spending time with friends and family is why a lot of us grill, so thought I'd share with you guys.
On to the cooking pics:
80/20 beef that I balled up and smashed thin using the bottom of my cast iron skillet. Seasoned with kosher salt and course cracked black pepper.
Seared then moved to the perimeter for the cheese to melt.
I'm simple with my burger toppings...American cheese, thinly sliced yellow onion, pickles, mustard.
Served with a little kale salad.
