Yard is still trying to recover from winter.

She's running again. Not sure how to get her under control. All bottom vents still closed.

Choke the top vent somewhat too. If yours is like mine you might have to start removing fuel. Those doors are the worst; you should get a better seal running the probes under the lid. Being careful, they won't get pinched bad.
It's the iconic symbol for the backyard. It's family/friends, food and fun. What more do you need to feel everything [is] going to be all right. As long as we can still have a BBQ in our backyard, the world seems a bit of a better place. At least for that moment. -reillyranch

Thanks guys. She was barely used by her previous owner. I'm sure some seasoning over the next few cooks will help too.

I heard they run hot at the start for the for few cooks. What did you finally do to calm her down?

No. She ran around 350° for the last couple hours. Fat cap didn't really render fully. Tasted great, after trimming the fat. Learned some things. Next time will be better.

Gonna cook a few chickens, over the next few weeks. See if that slows her down.
