Fresh Gulf Coast whole Redfish Friday night

Been wanting to grill a whole fish for a while, so that's what I did after firing up the performer.





Figured while the grill was kicking, I would grill some shrimp and asparagus (the roasted potatoes were done in the oven due to timing).

Looks great. I've never done whole fish before. Do you like to cook that direct med?

Yeah...you cook whole fish, direct heat, 8-10 mins per inch of thickness. That big red took about 22 min.
