After my great deal on tri tip the other day, I decided to go for it with the Cardiff Crack recipe...

Marinate tri tip with:

2 cups of dry red wine
1/4 cup olive oil
3 cloves minced garlic
1 tablespoon honey
1 tablespoon of fresh ground pepper

Mix up and pour in a bag with your tri tip.  I did this about 7:30 this morning.

4:30 this afternoon, took it out and put it on the old brownie grill...

Fatcap on is the way I like to do them too.....seems to keep the moisture better....grand looking meal right there!!!!

I just tried this recipe last night. Turned out very good, but no where near the flavor of the actual "Cardiff Crack."  I didn't notice a salty flavor at all. Is salt missing from the marinade? Should I have salted after removing the tri tip from the marinade?

It's hard to find them with the fat cap but that's the way I like it too. Perfect color on that roast!

@BBQ_Skit I do salt after taking out of the marinade and putting on the grill.  I also use a bit of pecan wood to add a hint of smokiness as well.  I like it, but having never tried the actual Cardiff Crack, I have no point of reference.

@crowderjd your tri-tip looks pretty dang good!

Do you guys have a link for the recipe? I have a tri-tip thawing out now...

I have had the Tri-Tip from Seaside Market in Cardiff. I don't think it's just the marinade that makes it so good. I'm pretty sure they tenderize it with some type of mechanical device too. At least that's what I was told, years ago, by folks that work there.
