Bang bang bacon balls

We had a Mardi Gras pot luck at the office today so I figured it was a good excuse to cook something up on my new kettle.   Fired up the grill at 7 am this morning.   These took about an hour and change to cook over indirect med-high heat.   The bang bang sauce consists of brown sugar, honey, Thai chili sauce and sriracha.   Only had one complaint that they were too spicy (but this person complains about everything).

These suckers went quick.  I'm making them again Saturday to take to a card game.

I picked up a big bag of frozen meatballs from Sam's.  For reference, I only used half the bag for the amount pictured above.    I used two packages of bacon to wrap the meatballs using either a third or half a strip each.


For the glaze:
1 cup brown sugar
4 tbsp honey
1/2 cup sweet hot chili sauce (Thai)
4tbsp sriracha (this will give you some good heat, if you want less reduce)
Couple dashes of cayenne pepper

I would go with the recipe above and add one tbsp of sriracha at a time until you hit your desired level.   

I use my 10 year old son as my heat guide.   With the four tablespoons of sriracha, he liked them but I could tell I was at the upper limit of spicy for him.

I actually wrapped the meatballs with the bacon while they were frozen the day before.   This made it hard to push the toothpicks in.   I then let them sit in the fridge overnight so they were pretty well thawed when they hit the grill.  Next time I'll put the meatballs in the fridge the day before I wrap them.

I made the bacon balls again last night for a party.   I changed them up by using the real thick cut bacon (I buy it at Sam's-can't remember the brand).  I also cut the sriracha just a bit although I personally liked them spicier.   They were definitely the hit of the party.
