I mixed softened butter with some fresh cracked pepper, thyme, savory, marjoram, rosemary and a bay leaf. Spread all over, and then generously covered in kosher salt.
Got the kettle steady around 325 (adjusting bottom (10%) and top vents (30%)) with charcoal baskets. Cooked for approximately 1.5 hours.
