Decided to make pulled pork for a birthday party i was going to. Went to a local butcher and got a 8# bone in butt. Rubbed it with some seasoning then mixed 1/4cup apple juice and 1/4cup of apple cider. Poured that on the meat and let it sit in the fridge for 6hrs(All the time i had, wish i could of let in on for 24). Then i took it out of the fridge dried it off and re applied rub.
Then i setup my kettle to run around 225-250 for the night with stubbs charcoal and apple chunks. Put the butt on at 1130PM. Woke up at 550am and went and checked on it. The kettle temp was 215 when i woke up so i also rearranged some coals.
I checked on it again at 11hrs cooking time and it was only at 185. So i once again closed the lid and waited. Finally at the 14hr mark it hit 196 and the probe went in like butter. I pulled in wrapped it in double tin foil and let it sit in a cooler for 1 1/2 hours. When i pulled it out of the cooler it was still very hot. This is the right out of the cooler.
And the final product. I wouldn't change a thing as it turned out amazing. Everyone loved it and it had just a very mild smoke flavor. I wish i wouldn't have over heated my meat probe earlier in the week so i wouldn't have had to keep opening the lid but stuff happens.
