Buckie your cook looks exactly how mine did.  Yeah we totally squeeze the onions, gave it time to refrigerate, and use the gelatin, but still seemed to fall apart.  Not sure what happened.

Z told me to get as close to zero added moisture as is possible (dry everything as needed) & the flat & wide skewers help a lot, as they cook across the inside quicker before the outer areas get too done & begin to crack...........
