oh, man, if ever there was a definition of food porn, that's it right there!  Are those charcoal baskets you have your skillet sitting on?  how hot did you run your cook?

Interested in some more details as well.  I never would have considered using a cast iron pan as they take so long to heat up.  I would have been afraid of the bottom still being soggy when the top was done.  That looks like it turned out perfect.  I'd love to do something like this in my big 12" skillet.

What was your cook time?

Yep, those are charcoal baskets sitting on a broken pizza stone. I use to have a different setup to raise the the cook surface before I got a kettle pizza. This is simple and fast to just use the charcoal baskets. Temp. Ran around 400-450 assuming the thermometer I was using is accurate.
