.....brisket.......

This one went over last nite & it jiggles like J-E-L-L-O !!!

Done on the Big Dawg....1961 Weber Cadillac "Fleetwood"



The lid looks funny hanging on an 18.5"....



Odd, but good combo....along with Ron's moisture injection.....



Clockwise, for beef......









Panned on rack, uncovered @ 6 hours.....



But the breakfast brats slowed things down just a bit....





Just going into the hold now.......

It jiggles, it jiggles !!!!

I love it when it gets jiggly. Righteous cook there Buckie. The stink of smoke and beef fat as one of these nears it's end is heavenly.

It was pretty dang good......hope the pics come out OK.....Ma's kitchen is almost as weird a lighting as ours.....

OK....it was reasonable.....just a tad dry in the flat.....thinking OVER-done, as I waited on cooker for it to cool after the coals ran out......while waiting to hear how hungry Ma was, i.e.: Do I come over now, or later....it was later so it dried a little or was maybe into the transport foil a little soon......

Bit of an update.....

Found some pictures at the end of a roll from last week's brisket cook......

This is right after getting back from dropping some off at Ma's place...she likes her beef...apparently, so does Bruno....









.....he was VIBRATING to get at some of this, so I made him up a plate to go...... 8)  :lol:
