Pasta on the Kettle
« on: June 13, 2014, 04:15:16 AM »
I was home alone last summer for few days and decided to try few new things on the kettle.
Started with smoked Mac&cheese. I made the sauce from scratch using béchamel sauce as a base (butter, flour & milk), added cheddar, Parmesan, Monterey Jack cheese and Mozzarella cheese.

I topped it with the same shredded cheese mix. I don't really care for breadcrumbs topping. Also cheese would take on nice smoky flavor much better than bread crumbs.
Also added some chicken drumsticks, Brats and yellow squash to go with the meal :)

Maintained the temp at 375 and used Hickory chunks for smoke. Best Mac&cheese I've ever had :)

Here is a baked Ziti done on the kettle as well
Started with Linguica and Italian sausage, also grilled peppers & onions and added a pan of basic Marinara sauce to catch some smoke flavor.

Sliced the sausage and the veggies once done

Alternated layers of pasta, sauce, veggies, sausage and cheese

Topped the whole thing with shredded cheese and parsley

Put it back on the grill and cooked at 375 for about 45 min and used Hickory chunks as well

Added some garlic toast

Yummy

That looks delicious. Great job. Do you poke holes on the sausages when grilling?

Oh man that looks good! Pasta, sausage and bread to complete the whole meal on one kettle! I think mac n cheese might have to be my next new endeavour after seeing all these posts of late. Perfect as always Hadi!
