Hillbilly Chicken Wings

My wife's daughter hates it when I set up on the front porch...says it makes us look like hillbilly's. Well it's raining out and I kind of like hill folk:



Picked up wings this morning and brined them in a water, molasses, salt and cider vinegar blend for about 5 hours. After draining the brine I dusted them with some rub MacEggs sent my way:



I like a little space between my wings and this being a high heat smoke then grill, I went with 2 cookers. Temps at the top vent were in the 400-450f range. I used Pecan chunks for flavour and went about 50 minutes offset before finishing over and just off of the coals:

Great looking wings there Hoss! That's funny, my wife doesn't want me pulling the grills out front either.

I thought that was your place when I drove by .... In my '79 Chevy pick-up .... toting a shot-gun ... whistling Dixie ....  8) ;) ;)

I have never dusted chicken with that rub.  Only ribs.  Was it a little on the sweet side?  Just wondering.  Thanks.  :D

Maybe a little. The wings were sweet from the molasses already anyways...and I dip em' in a blue cheese dressing/hot sauce mix so it all kind of blends. It was all good. The wife was happy with the product so that was a good sign.

I like those bigger ones like that.....nice fixup with the brine & dash !!!!

I usually split them into wings and drums. But it looks like they cook great whole, and I bet they pop apart with a gentle squeeze at the joint. They look delicious!

I use the same technique for my wings except I cut off the tips.

Wings look great Hoss, like the sound of that brine! I've never grilled in the front of the house, don't want someone thinking they need to walk with my dinner ;) or open the damn lid if I'm not there.
