What are normally "oven" dishes that you do on a grill?
« on: April 02, 2015, 09:15:47 AM »
The other day I did my first kettle smoked meatloaf, and it turned out killer!

I've roasted chickens (whole, spatchcock, leap frog) and made ground lamb stuffed bell peppers (before I started taking pics). My grandfather has been smoking our Thanksgiving turkey on the Weber for close to 40 years.

I know that anything you can do in an oven, you can do on the grill. After reading Troy's thread on smoked mac and cheese, I have the idea to make a lasagna and cook that on the kettle!

So - what's something that most people cook in the oven that you do in the kettle? It can be basic, creative, turned out good, turned out bad, just an idea that you haven't executed yet.... I'm looking for some fun new ideas and thought this could be a cool thread. Feel free to throw in pics or link to previous posts so you don't double up on the work.

Thanks in advance and can't wait to see what you all come up with!

Pizza of course.  Cookies. Corn Bread. Meat Loaf. (Pizza Rolls).  ANYTHING frozen, like Lasagne, casseroles, fries etc.

@dazzo I do the same charcoal setup with the baskets for a lot of stuff that I do, I think seems to give the most grill space when you need high heat.

I'm stoked on pies and deserts! Is there a fuel that your prefer for deserts? I would think something like Coshell or good lump would burn the cleanest and contribute the least flavor. Or do you guys go after smoked apple pie?

I've only used KBB

Once it's ashed over, it's just heat, and then you've got your oven.

May take a little longer before it's ready, but no smoky flavor.
Dude, relax your chicken.

I don't like hickory smoke in the kitchen, so these go outside.....

Recipes & such:

http://weberkettleclub.com/forums/bbq-food-pics/hickory-smoked-turkey-meatloaf/msg69095/#msg69095

Things like fries & tater tots sometimes......a pie fixup or two, but usually they're not like apple or cherry but sausage or meat pie type things.....

Deep fry stuff, like Natchitoches Meat pies.....

Recipes & such:

http://weberkettleclub.com/forums/grilling-bbqing/natchitoches-meat-pies-on-the-lump-disco/msg116950/#msg116950

It's the stuff that would stink up or way mess up the kitchen.....
One thing I don't do a lot of is roasted / smoked chicken, as the wife does a monster job of that in the oven & usually has it going before I even get a chance to opt in for the outdoor cook.....
"If you want it fancy there is BBQ spray paint at home depot for that. "
    Covered, damper-controlled cooking.....IF YOU PLEASE !!!

I love this thread

my wife thinks I am crazy because I have this expensive range that has convection cooking and all these different sized burners, One I insisted on buying when we needed a new range because it had all the bells and whistles, and yet I insist on cooking whatever I can outdoors.

Between the dutch ovens and the grills I probably cook more outdoors than inside and that means oven cooking also.

So seeing that I am not the only one to bake an apple pie on the grill, or pull off a lasagna, is a comforting relief
If we were meant to grill with gas then the garden of Eden would have had a pipeline

Last time I did fried chicken my kitchen stunk for a week, so I will definitely be doing it outside from now on! I've never thought of using the grill to cook frozen entrees that normally go in the oven.

@G$ That's parchment paper right? I'm guessing was paper would melt.

@austin87

Yes I use parchment paper for lots of things like cookies, bagel bites, hot pockets, etc.   As long as there is not live flame right under you are ok.  I like the way it cooks more than putting them on foil, and I like being able to toss the paper and not worry about cleaning a sheet or pan.  Super easy.

And to answer you other question on fuel, well burned down K is what my default is.  Any smoke flavor still imparted is mild/desirable.  Grilled cookies have an extra "something" but you would not call them smokey.
