More Stuffed Mini Potatoes

   This time we tried Monterey Jack , pepper jack and blue cheese with bacon bits.

I use a melon baller for both the spuds and the cheese , remove center of potato and place in bowl , drizzle with olive oil and season , add cheese and roast for 45-60 or until tender.

@Idahawk the potatoes start raw right? No pre-cooking before you melon ball them?

@austin87 correct , just like a baked potato ... Just oil and season up the skin

They look awesome.  I have only ever stuffed larger potatoes and never thought about the smaller sized ones.  Great idea.  Thanks for sharing.
