I made a Horseradish sauce from the following ingredients:
Hellmann’s Mayo, prepared horseradish paste, fresh crushed 2 cloves of garlic, 1/2 tsp of lemon juice, chives, granulated onion powder and S&P to taste.
I use Mayo on meat in place of oil, since it’s 90% oil. The oil in Mayo is emulsified, so it’s sticks well to the meat and it does not run off like plain oil. I like using Hellmann’s myo because the first ingredient is oil, another word it oil base and not vinegar base like some other brands. I believe it’s called “Best Foods” on the west coast.
The mayo totally disappears after cooking leaving the moist meat and whatever flavors it was carrying behind. I did some chicken a while back with the same mixture above but without the horseradish and with extra lemon juice, garlic and oregano
As you see, the myo totally disappeared leaving a nice curst on the chicken
I started with 2 Flat Iron steaks and the horseradish sauce
Smeared the horseradish myo on both sides of the steaks
And then added the seasoning and mixed them up
And onto the grill
Also grilled some shrimp and veggies that were basted with EVOO, garlic, lemon juice, oregano, parsley and some spices.
