Salmon Dinner!

I used to love Salmon.  3 yrs ago I fell out of love with it! It was too "fishy" for me! Today I saw some nice Salmon steaks so I grabbed a couple.

I brined the steaks for about 20 mins to negate the Albumin.

I bought a bag of pre-washed Mustard Greens. I sliced up a sweet potato real thin, and chopped up a sweet onion. I used my griddle to cook this.


Next I put in the salmon and went back in to make the glaze.

I will come back tomorrow and edit the post with a link to the recipe that I used for the glaze.

Next I sliced up some zucchini lengthwise coated one side with oil and seasoned them with Kosher Salt and pepper. Add you can see,  the Salmon was coming along nicely

The salmon looks perfect eccj! and the glaze looks like it's loaded with flavour - very nice plate up!

I love cooking veggies on the griddle. And the salmon id best cooked on the grill.

Looks good to me, I like the greens. It looks like you got some little sticks there on the coals, what were you using for smoke? Nice salmon!
