Thought, why not. Ran up to the store after the dogs woke me up, and they had a couple of half racks of spares on reduced quick sale. Six bucks total.
Side burn method in the charcoal basket with apple and hickory
rubbed with some of my homemade rub

got up to temp in about 15 minutes, closed the bottom vents down and it held in the 275-300 range (works for me)
after about 4 hours and a couple of bastes with a vinegar, crushed red pepper, salt, and brown sugar mop

back inside awaiting a brush with my chipolte coffee sauce

ahhh ribs....

After seeing those ribs I have to say

that is it, I need to do some Kansas city ribs

I just made me a rib rack and now I need to break it in, these rib threads are killing me

Nice job on those ribs
If we were meant to grill with gas then the garden of Eden would have had a pipeline
