The finish is porcelain coated just like all the weber kettles and Smokey Mountains

How close is the color to Brick Red? Or is it more of a burgundy?  @Jeff

@Josh G , well...i don't own a brick red kettle, but I do have a burgundy MT.  Its closer to the burgundy, but the color on this smoker does take on some different  hues depending how the sun hits it, as you can probably see in the photos.

First time I've seen this thread, incredible mod @Jeff , that color is amazing!! Do you have any info you can share on the latch? Only ever seen those in black plastic from cajun bandit. I like your chrome latch much better.

I'm concerned about using the One Touch system on this setup.  The lower vents of a true WSM bowl are obviously mounted higher up on the sides of the bowl itself.  No way that ash would ever build up that high...even during an overnight cook.   I worry that during longer cooks, I'm going to have to be more conscious of the ash clogging up the vents because they are oriented so much lower in the bowl.  I'm not sure I want to sweep them back and forth to clear the vents...and in the process send a cloud of ash up towards the food.

@Jeff  - did you wind up using a HC internal ash pan, or making additional mods, or does the OT system work alright for you?

I used the One Touch System first before I put the Happy Cooker internal ash pan in.  It actually worked ok, but I was very, very careful to sweep the ashes during a cook.  I did a "sweep" once during a 10 hour cook, but did it very slowly.

I now have the HC pan in there.  I did have to grind out a notch in the lip of the pan for the burner tube so it would sit level in the bowl.  The pan would bump the tube if I didn't make the cut for it to fit into.  This seems to be a much better idea, and it does work.  I hated the thought of ash rising up into the cooking area during the smoke if I sweep the ashes.
