Around here there are a BUNCH of people from St Louis. When you talk BBQ with them, you're talking Pork Steak!  ...and for good reason. They're great!

One of the first things I learned to bbq was the pork chop. Love that first shot....smoke coming out from under the lid of a 50 year old beauty.
