The plan is to get the 8 lb pork butt on by 11:00 pm (9:51 now). A little mustard and Plowboys for the rub. Hickory chips for smoke and running a 2x2 snake. I made up a little apple juice and captain for the spritz.  About 3:00 pm, I'll throw on the Dutch's Wicked Baked Beans before we head to church: http://www.smokingmeatforums.com/t/50945/dutchs-wicked-baked-beans . The baked beans are always a crowd pleaser. Now, if I don't keep on drinking Captain and diet's on the pace I'm on, it should be all good.

During the down time, I'm going to put together a bike for my 6 year old, and a scooter for my 2 year old.

Wishing you all a Merry Christmas.

It's on like Donkey Kong. Got the butt on at 11:00. I'll let it settle for a half hour, shut the vents down a bit and then it's night night time. I guess there's time for one more Captain before I hit the sack though.

Putting the bike and scooter together was a piece of cake.

Another couple of weeks and the oranges will be ready to be picked for fresh oj. I'm not a fan, but the kids and wife love it.

Long story short on these guys. A skinny little cat started hanging out in our back yard a few years ago. I felt sorry for her and started feeding her. A few months later there were 6 kittens running around in my back yard. After the oh shit moment (there's going to be a hundred of these things if I don't do something), I rounded them all up and got them spayed / neutered, and now 3 of them consistently hang out, but I see all of them from time to time. How did this happen? I'm not even a cat guy.

Midnight. Off to bed. Grate is wide open on the bottom, top is open about the width of a pencil. Current grate temperature is 200. I'm guessing it settles in around 240 - 250. Currently about 65 here in Phoenix with a low of 37 forecast. I'll set my alarm for an hour from now to check the temp to see where it settles in.

I'm in the middle of a pork butt cook as well! It will be 10 hours soon and it recently started to rain steadily. It is currently in the stall period. Working in a few hours is going to be rough!

How'd you make out @AZ Monsoon?

Here is my post cook write-up: http://weberkettleclub.com/forums/bbq-food-pics/christmas-pulled-pork/new/#new

Nice looking cook Tim. I hope mine turns out that juicy.

I didn't even wake up until about 6:00. The temperature was a little low at about 210. I brought it back up to 250, but will need to add fuel fairly soon. 7:30 AM

I'm determined not to abandon this thread :)
Beans done and into the crockpot. Pork in the 190's. Getting close.

Bingo !!!

The 'traditional' Christmas pulled pork !!!!

Try to let it get a decent rest before pulling.....really helps even out & amp up the moisture as far as I can tell......
