Cream Cheese Stuffed Whole Salmon

Got a fresh whole salmon from the Farmers Market

The stuffing ingredients: butter, cream cheese, roasted garlic, fresh dii, thyme, parsley, and chives and some lemon for juice and peel

Combined the ingredients in the mixer after chopping the herbs and added, s&p, spices and some EVOO and lemon juice

Processed the mixture until smooth and creamy

And spread it inside the fish

Mad few slits on the skin on both sides and stuffed lemons, herbs and some spices

Tied the fish with some twin and brushed it with EVOO

And onto the smoker at 350

And around an hour almost done

And the cooking is done, skin nice and crispy

And the cheese is nice and gooey inside :)

Wow. That is bbq at a higher level right there....very impressive.....restaurant worthy and then some.

I really miss cheap salmon from the farmer's market.....in the mid-90's, we could get 20~25lb'ers from a guy who caught them at the head of San Francisco Bay & came up here to the market every Sunday early.....$2.50/ #

Would then split them down the middle, skin down w/ cooking sauces, onto a 22".......you had to tuck the tail in to get the lid closed !!!!!

    Covered, damper-controlled cooking.....IF YOU PLEASE !!!
