I can now add Smoked Turkey to the list...

I was sick with the Flu last week so I missed the small Turkeys when they went on sale at Kroger.  Wednesday I went to another store and we found them for a good price.

Ended up with a 12 pounder. I thawed it out overnight in a ceramic stew pot.  I did some research and decided to Spatchcock the bird.

I cut out the back and cut along the sides of the breast bone. I injected the turkey with Creole Butter and Rubbed it with Weber KC barbecue rub


I let the turkey rest at room temperature while I got my fire going.  I banked my coals put on some Pecan wood,  then some more coals to get the heat high enough.

Looks great.  Might have to try spatchcocking a turkey sometime.  I can see it works great.  Butter Creole is one of my favorites to inject with.

I really did 604! When I run out I'm going to make my own. Melt down a pound of Butter, add a cup of a Creole seasoning like Slap Ya Mama, Tony Chachere's,  etc... Bottle it up! :D
