Stuffed Pork Loin

Started with center cut pork loin that I cut into 2 halves and butterflied them

I seasoned 1 half with some rub to grill as a steak

I decided to stuff the other half with loose sausage, Monterey Jack cheese and diced roasted chilies, and then wrap with bacon

Applied the stuffing

Rolled the loin and wrapped with bacon

Onto the smoker with pan full of apple juice underneath

While the stuffed loin was cooking, I grilled the other half directly like a steak to snack on while waiting :)

And stuffed loin was done

Sliced and topped with the apple juice from the drip pan, which thickened became like a glaze after cooking

They have pork loin on sale over at the grocery store and those look so good I may have to copy you.
