Pork Shoulder Sirloin Roast, ABT'S, & Potato Bombs!

Last week I found an almost 4lb Shoulder Sirloin Roast for a little over $4.00. I'm sorry,  it was too good of a deal to leave it on the shelf!

I've been very busy as of late so after scoring the fat cap & injecting the roast with Creole Butter I let it marinate for almost a week.

I banked the coals to one side and put the roast on.  Next up were the potato & the ABT'S! 

The entire cook took about 3.5 to 4hrs at a temp of 275. I used Pecan wood for smoke.

Food looks great. Trying to figure out what seems to be two layers or levels of foil.

I put heavy duty foil around the inside of my kettle,  and I also cover the bottom grill grate 3/4's leaving a small part open for airflow.

I know Brotha!  Lol I mainly cook for myself so I've started buying & cooking less (smaller amounts) food.

Thanks 604! I put a jalapeño stuffed w/ brie in the center, then Pastrami & Ham to fill the rest.
