Glorious little nugget

Just pulled this little guy off the performer.  It was 5lbs after a bit of trimming and took about 7.5 hours to probe like buttah.  I used a Stubb's charcoal snake and alternated hickory and apple chunks on the snake.  The snake went all the way around except where the drip/water pan was.  I added to it after about 5 hours to make sure it would be long enough...also because I had company coming over and didn't want to have to add to it while they were here if it started running out.  Looks like I would have had just enough snake without adding to it.  I did notice that starting with 12 coals took a lot longer to get up to the temp I like to cooks butts at (275ish).  Anyhoo...it's getting a couple hours of rest in the cooler and I'll pull it before heading to bed tonight.  I'll likely update with a pulled pic too.

Here is the pulled pic.  Yield was exactly 50% after the bite or seven I had while pulling.  I'm happy with the bark, smoke ring, and juiciness (the pic doesn't do it justice).  This is the second time I've used Chris Lilly's rub recipe and I'm really liking the flavor profile.  I haven't seen the need for his injection recipe though.



Other observations:  I'm certainly a fan of the snake method on the kettle but it isn't quite as "set it and forget it" as my UDS.  I really need to make a mini WSM out of my SJG for times when I'm only doing one butt.  I'm still hoping the Vasconia pot comes available from Walmart even though I had an offer from a very nice Canadian (who shall remain nameless ;) ) to ship me a NIB pot from his personal stash.  I just can't bring myself to pay almost as much for shipping as the pot costs...yet!

This is great combination for what you describe. The MWSM is super fuel effecient and pretty darn stable with temp control.

I WILL have a mini someday.  I stalk walmart.com daily for the Vasconia steamer pot.
