2.5lb Brisket Flat on the Weber One-Touch Silver

Perfect size for dinner for four. No cut shots... went too fast!



Here's a shot of an earlier brisket flat to show how I have the firebrick barrier set up. Pit and meat temp probes run through one of the bottom vents.
