I agree veggies and mea should be cooked separately. I only put peppers and onion between pieces of meat for the purpose of flavoring the meat and keeping it moist.
I think it’s all about technique and using the right skewer for any particular food. So any thing can be cooked on skewers.
Here is Tri Tip and chicken halves done on the skewers, as you see in the pix, the meat is anchored in 2 different ways.

Free Image HostingEven for mushrooms, if you leave the stems on and go thought them with a skinny skewer, they’ll stay on until the end. The stem is kind of tough, so why not take advantage of it.
