Mexican Street Corn

Grill it the way you like to . Then coat first with butter then mayo , roll in a good Mexican cheese of your liking,  pressing down slightly to make it stick ,  sprinkle with a little paprika  and be prepared to eat 2-3 ears :)


Mexican cheese is salty and if your using salted butter , I recommend not salting your corn at all.




Probably nothing new to anyone , just a great way to ramp up an old standby for grillers

OK, let's stick some bacon in front of ya & see how that goes...............

Chop into cobbettes, roll / sprinkle w/ chile powder...........



Bacon up, smoke for awhile, then plop a pat of butter on top......

You can hit it with a squeeze of lime and add some chopped cilantro too .

Love me some elote!  Here's what we do:

8 ears corn on the cob

6 Tablespoons mayonnaise
6 Tablespoons freshly grated Cotija cheese
4 teaspoons lime juice
2 teaspoon ground chile powder
½ teaspoon chipotle pepper
½ teaspoon cayenne pepper
1 teaspoon smoked paprika
1 teaspoon smoke salt
1 teaspoon cummin
