Skirt Steak Rolls

Found these skirt steaks at Costco

These things were over 2 feet long each :)

I applied a southwestern rub to them and soaked them in red wine for a couple of hours.
I decided to stuff these things with some peppers (Serrano, cayenne, sweet baby bells, banana peppers), scallions, blanched carrots and Mozzarella sticks(the shape and the size are perfect for this application).

I then cut the steaks into small strips and butterflied the thick pieces.

Threaded them on skewers after rolling

I could’ve used toothpicks in place of skewers, but I thought this would be easer.
Grilled them over Mesquite lumps

Also grilled some corn

Sliced them across the grain into little rolls while eating. They look like meat Sushi rolls :)

They were very tasty and tender; I’d definitely do this again.

Cook to perfection. Charcoal taste has to be distinguished. Love it.
