Lemon Garlic Chicken

Marinated some boneless skinless chicken thighs in a mixture of lemon juice, garlic, EVOO and seasoned with my own seasoning salt, oregano and S&P for about 3 hours.
Grilled the chicken thighs directly over the coals to gives them some color and grill flavor

Placed the partially cooked chicken thighs in the DO

Added blanched red potatoes, slivered garlic cloves and few sprigs of Thyme

Added fresh lemon wedges, 1/2 cup of EVOO, 1/4 cup of dry white wine, and a little of the seasoning

Sealed the DO and set it opposite of the coals

Covered the grill and maintained the grill temp around 350 and rotates the DO every 15 min or so

Half an hour later (half way through the cooking time)

An hour later, the cooking was done :)

And dinner was served :)

Served with sautéed fresh spinach and rice pilaf

The chicken was falling apart tender, the potatoes and the chicken had a nice and subtle lemon and garlic flavor and even the lemon wedge were so tender and edible and the garlic cloves had a mild and roast garlic flavor.
It was a very tasty dish :)

I love coming on here for cooking ideas just such as this. Love lemon pepper chicken and this gave me an idea to try. Your cook looks fantastic.
