First ribs on the demo

Thought I get my feet wet with my grandpa's demo and try some baby backs. Usually do st Louis style but these were on sale. Tried the "snake " for the first time and it worked great. Kept it around 220-245 all day according to the maverick. Sorry no before pics, just the aftermath.

Almost like that DEMO kettle's been doing them that way since it was new.

Nice job on the Rib's with the Demo kettle. Just fyi you can run the probe through a potato or an apple. I did like the wire to hold the probe.

Sometimes technology is a good thing. I love that maverick. I lost the clip it came with and have been trying anything to hold it. Anyone have a pic of an apple or potato in use?  Do you just shove it all the way through so the end sticks out the other side?  Thanks for the compliments on the ribs.  They were great for lunch today.

I use a wine-cork with a hole drilled in it for my therm probe on the grate.  You have to find the balance point on it, but it works great and is reusable.  Been using the same cork for over a year now.  (Beer doesn't come with a cork)   ;D
Interested in ANY offset handle SJs you may have.
