16 hour baby back ribs

Local news stations have been buzzing with the recent release of the "top ribs" list.  Four of the top ten spots go to local KC establishments.  I was reading some of the comments on one of the local stations websites and found an interesting comment plugging another KC area Q joint...so interesting that I too had to comment.  Here's what has been posted:



So...thoughts on 16 hour baby backs?  Mine are usually done in 3.5-4ish, but I cook at 275*

16 hours on a pit that is over 225 does sounds a little outlandish.

I could see it maybe being 6-8 hours on a pit, and then a longer resting period 8-10 hrs wrapped in which they continue to "cook" in a cambro or holding pit, but yeah I'd like to be there during a normal day and watch what comes off the pit after 16 hours if what they are saying is true.  I would guess it would be black and dry. 

Maybe they cook them in liquid for 16 hours? 


oh, and I found the pig they guy was talking about that had 25 ribs a slab...  ;D

My guess is he cooks 16 hours a day, not the same rack for 16 hours.

Thanks for the link Todd. They never disclosed the entire list, just the KC restaurants that made it. I must say that I have eaten at every notable BBQ place in KC and none even come close to Pappy's Smokehouse here in STL. Everyday, there is a line of 200+ people waiting to get in this place and that's no exaggeration. The ribs are THAT GOOD!

Thanks for the link to the list Todd. I just don't understand the list. I have had Gates BBQ and I was not impressed at all. (not bad, just average Q) The people I was with when I was there had the same reaction. How can Gates be 19 spots ahead of Pappy's?

I really wonder if the person who compiled the list actually ate at all these restaurants? Either that or there must be some political element to comprising the list? I don't see how Roper's Ribs in STL even made it onto the list? They are a joke.

What about Jack's BBQ in Nashville? What about Germantown Commissary in Germantown, TN.? These places weren't even mentioned?

I'm from KC so I have a biased view about my hometown BBQ.  I agree with you rams that it's a silly list. I'd bet that 3 of my top 5 KC joints are not on the list and nationally unknown. Gates and Bryant's get tons of publicity and are not what they used to be for various reasons. One persons perfect slab or sauce may not be appealing to others. To sum up rib joints in list is impossible and ridiculous. But these best of anything slideshow/lists are very popular and must draw clicks and media attention.

Agreed.  While I really like Oklahoma Joe's, I've never had their ribs.  My "go-to" is a Z-Man sandwich.  I'm not a huge fan of Gates or Bryant's either.  I'd take Smokin' Guns, Johnny's or even Smokehouse on North Oak (not the Zona Rosa location) over either.  I do like Jack Stack's sauce though.

In their day both Bryant's and Gates were top notch. Expansion and change of ownership has kept them viable but the product has suffered. I like Johnny's in Mission too. My favorites are Rosedale, BB's and Woodyard's. Jackstack and OK joes serve up good Q too. John Russell.is good and part of a newer wave of BBQ start ups that are out there in KC.
