Crispy Skinned Fish (Whole) - Using the Small Grate Technique

We love asian style fried fish, but it's such a pain to make.

Traditional grilling methods just don't get the skin crispy enough, so I started using this method to grill fish and get a super crispy skin.

This is great. I have very limited seafood cooking knowledge.  Maybe I can find some fish at the local Costco that will work for this.

That's a cool technique.  I've had the same problem with fish...skin never seems to get crispy enough with the grate up high

Crusty/crispy skin will depend on the type of fish. Pompano is a fish you can easily get a crispy skin when grilled.  I grill it at least once a week for my wife. Very high temperature on the rotisserie or indirect/semi-direct on the grate always yield a crispy skin. She doesn't like a smokey flavor so i stopped cooking it caveman style.

Only whole fish you'll find at Costco is probably trout.

Same here. Sometimes i just use lemon or lime. Best soy sauce are those from Taiwan and patis from Vietnam. Virgin patis from Vietnam especially for dipping are exceptional. Pricey at $8 a bottle but it's fine since you really don't use much of it. For cooking, you can get away with the cheaper varieties.

Only whole fish you'll find at Costco is probably trout.

Sometimes they have some different whole fish. I canít remember which kinds. I just look at them like Iím trying to read a foreign language. I have no idea about cooking whole fish.
